Ahhhhhhhh! I've been so completely active lately.

Today I competed in a Chinese take-out cook-off. It was amazing to start to see the turn out and all the creative dishes.
We were necessary to help to make 250 examples. I understand… that is clearly a large amount of freakin' samples! I spent my Sunday evening chopping, dicing, and hearing Bon Iver. I used to be totally within the zone. There is something about the combination of music and meals that leaves me feeling totally content. After all, I REALLY LIKE creating dishes more than anything on earth. Music tunes out the rest. I become happiest in my own brain thinking about flavor combinations.
Here's a sneak look: Each morning I wake up and dig through my cupboards. Last week I came across coconut. I acquired super excited. Up coming there were raspberries and coconut dairy in the fridge. Guess what happens I came up with? Toasted coconut oatmeal with raspberry coconut milk & almonds. Which was my breakfast time. Same thing occurs at lunch time and dinner. I cannot help but simply throw the things I find jointly and somehow allow it to be delicious.
I suppose it would have already been really helpful to have figured all of this out four years ago, but that isn't how life works. Life makes you work with what you want. It surprises you! And I'm alright with that, so long as I can keep eating issues that pop into my human brain, then talk about them with you. Great?
For the contest I ended up producing ginger-garlic chinese chicken lettuce wraps with sweet mango salsa. I had been sure they were going to win. Significantly who doesn't like MANGO & CHINESE CHICKEN? That mixture makes taste buds dance with pleasure. I promise it's true.
Even though my dish didn't win, I'm actually incredibly happy I competed. Get together others using the same enthusiasm for meals makes me feel just like I might be actually normal. Because I have a unusual feeling that watching the Food Network and grocery shopping on a regular basis isn't? I dunno… I'm just doing my matter.
Right now I can tell you a very important factor. All I wish to do is rest and consume a big giant bell pepper stuffed with goodness and dripping in enchilada sauce. Guess what happens I don't wish to accomplish? Finish off my most of my things. I think I failed to talk about that I'm departing Washington DC!
Life is totally bonkers right now… in a good way! SO MUCH is happening. Hopefully I will have some exciting news to share with you soon. But maybe we should discuss this another time? My suitcases are waiting around to become packed and I can tell you desire discuss these bell peppers which are stuffed to the brink.
Just take a look at these. One of my favorite items I've made in some time. I swear all it takes is one bite and you're in a world full of deliciousness. That was a serious declaration by the way.

Mexican Spices. OMG. What else?
In my world they are a dream become a reality. They're savory, healthy, roasted, and simply FREAKIN' AMAZING. Merging chicken breast & quinoa with enchilada sauce and then stuffing it in a pepper is probably one of the best decisions I've ever made.
Please can get on this level with me. Significantly… somebody must.
Enchilada Chicken & Quinoa Stuffed Bell Peppers
3 bell peppers, cut in two and seeded
1 cup prepared quinoa
1/2 cup cilantro, plus more for garnish
1/2 onion, diced
1/2 teaspoon dark pepper
1/2 cup reddish enchilada sauce, plus much more for topping (I typically use 1 can)
1/2 cup low fat cheese of your choice (I like colby jack)
Directions
Preheat oven to 375 degrees F. In a big bowl combine chicken, quinoa, egg whites, onion, cilantro, garlic clove powder, cumin, salt, pepper, and enchilada sauce. Mix well.
Stuff each pepper half with the combination. Best pepper with 1 tablespoon of enchilada sauce and 1 tablespoon of parmesan cheese. Bake for 45 moments.
Serves 6

one issue…i live in Vancouver, British Columbia…anyone know where I could find enchilada sauce? Don't know that I've seen that round the grocery store…
