Hi men! Sorry about acquiring last week from blogging. I was in Boston on just a little vacation with some of my close friends from college. We had an unbelievable period cooking cookies (new recipe coming soon), exploring the North End, running around Southie, and laughing until we couldn't any longer. Life is great! I'll possess a recap quickly of all of my Boston outings plus some favorite points of mine, too! But of course, Monday emerged and vacation ended. And today it's October; I can't believe it! I've been busy working outside seeking to soak it all up before Minnesota climate comes swinging in with detrimental temperatures. Certainly since it has been so lovely, I've been slacking within the baking department. Sorry about this! I'm back right now… with tasty small bars. You're excited, right?

  • Ingredients
  • 2 teaspoons aluminum free baking powder
  • 1/2 teaspoon baking soda
  • 2 teaspoons pure vanilla extract
  • 1/2 cup unsweetened applesauce
  • 1 tablespoon olive or coconut oil
  • 1/3 cup vegan chocolate chips, plus 2 tablespoons for sprinkling on top
  • Instructions
  • Preheat oven to 350 levels F. Spray 8×11 or 9 inch baking skillet with nonstick food preparation spray.
  • Make oat flour Place oatmeal into blender or meals processor and mix for 1-2 minutes until oatmeal resembles flour. You may want to stop blender and stir oats a couple of times to make sure that all oats have been blended.
  • Measure out just 2 1/2 cups of the oat flour and place inside a medium bowl. Whisk in cooking powder, baking soda, salt and spices; set aside.
  • In a separate large bowl, whisk jointly pumpkin, brown sugar, vanilla extract, oil, and applesauce for 1-2 a few minutes until the consistency is steady and creamy. Slowly add oat flour mix and mix until just combined.
  • Gently fold in 1/3 cup of chocolate chips. Pour batter into ready skillet and sprinkle remaining 2 tablespoons of chocolate chips on top. Bake for 15-25 a few minutes or until knife inserted into center happens clean or with just a couple crumbs attached. Timing depends on what size pan you utilize, but definitely check around a quarter-hour. Once finished baking, cool ten minutes on wire rack. Cut into 16 pieces.
  • Bars could be frozen. Simply bake, cool, cut; store in ziploc bag. Reheat individually for 30 mere seconds in microwave.

  • Hi Monique!! I think I'm doing something amiss with these pubs. I made them the very first time even though they appeared amazing, they had a really solid after-taste (kind of metallicy/soapy). I analyzed the recipe and recognized I hadn't used aluminum-free baking powder. So I made them again, this time around using the correct baking powder. Again they appeared amazing but had exactly the same aftertaste. I really want to like these….do you have any idea on what I'm doing wrong? Personally i think like I'm a bit crazy, but I swear I'm following the recipe exactly, except for spraying my skillet with coconut oil spray (I've thought about that and do not think this task would yield the effect I'm obtaining).

  • These bars are SO good! I am not really vegan so I utilized 2 eggs rather than the applesauce, only because I had formed no applesauce on hand. I also used nearer to 2/3 glass chocolate chips. They are not super nice, but so moist! I wish to talk about them so I don't eat them all myself but at the same time don't want to talk about whatsoever!! These will be a staple for me personally when I need a sweet deal with.
